Tabata once a week is good enough for a cardio workout? Or would you recommend tabata once a week with other forms of cardio as well?

Funny enough for long term use tabata is recommended to be used rarely, like once a week.

You definitely want to be doing more during the week, you can add in some longer intervals like 30 seconds or 60 seconds
