8 sets or high intensity?

I used to intervals with sprinting, but now I can't keep up at all. So I was just wondering what would be better - going all out sprint for x number of sets then increase number of sets every week (or couple weeks) or start with fast jog and do 8 sets then start increasing speed of my jog till I sprint 8 sets.
